Rice dessert thing

So, if you've got leftover white rice (I usually use Uncle Ben's, but I suppose takeout rice might work too), this is a good simple dessert.
Put rice in a bowl, sprinkle on sugar (lots) and cinnamon (some). Add milk.
Eat.
Tasty, sweet, simple. And now you don't have to throw out that rice.

Veggies on the grill

Having discovered my roommate's G. Foreman grill, I've been experimenting.

1 Orange bell pepper
1 bunch of Asparagus (thin kind)
1 large Portabella mushroom
Salt, Pepper
Garlic Salt
Olive Oil
Aluminum Foil

Slice pepper into thin slices.
Cut ends (not the leafy part) off of asparagus (I like mine to be about 5-6 inches long).
Cut Portabella into smallish wedges.
Put all onto a large sheet of aluminum foil, and turn up edges.
Drizzle on olive oil.
Add salt, pepper, and a little garlic salt.
Fold up foil to make a sealed pouch. Shake pouch to distribute oil and spices.
Place on grill.
Turning occasionally, cook for ~10 minutes.
Free veggies from foil onto a plate.

non-meat burgers, an edible Boca

So, I purchased Boca Burgers, and Garden Burgers, to see what the difference was.

Garden burgers win by a lot.
Boca's are fairly dry and cardboard-like, with faux grill marks. They are also brown (what veggies are brown?).
Garden's are moist when cooked, full of visible vegetable pieces.

Since I bought a full package, I needed to figure out a way to make the Boca's palatable.
so...

Masked Boca's

1 Boca Burger
1 Bun
1 Tomato
1/2 Avocado
Sprouts

Grill the burger (G. Forman works well).
While grilling, (to warm it... doesn't need cooking) cut a few thick slices of tomato and slice avocado into smallish pieces.
On top of bottom bun, layer: tomato slice, burger, all avocado slices, tomato slice, sprouts, bun top.
And, by the end, it's pretty tasty. And good for you. The sprouts add a nice crunchiness.

Chilly Nutella

(discovered in VA by Rodin)

need:
1 English muffin
Nutella (usually in Peanut butter section)

Toast the muffin (this is important, as it reduced its water content)
Generously spread Nutella on each half of toasted muffin.
Place on plate, put in freezer.
Wait (30min-1hr)
Take out muffins, eat.
revel in the tastiness.

Avacado Salad

Tasty and simple.

You need:
1 reasonably ripe (not squishy) avacado
1 tomato
1 cucumber
1 lime
salt and pepper

Cut avacado, tomoato, and 1/2 of the cuke (save the rest for another salad) into chunks.
Mix together in bowl.
Slice lime in half and squeeze all the juice onto the pieces.
Add salt (liberally) and pepper.
Toss and eat.
Tasty!

(this is a decent sized 1 person salad. )

Tilla Cookies

From a great grandmother of mine (named Tilla)

need:
4 c. flour
1/2 tsp. salt
2 tsp baking powder
1 c. butter
2 eggs
1 c. sugar
1 tsp. vanilla
1/2 c. sour cream
1 tsp baking soda

Preheat oven to 350 degrees F.

Using two knives, cut together flour, salt, baking powder, and butter.
Beat the eggs
Add eggs, sugar and vanilla - mix well.
Mix together sour cream and baking soda
Add sour cream and baking soda mix to the rest of the ingredients.

Chill dough overnight.

Roll dough out very thin (on well floured surface)
Cut out cookies, sprinkle with colored sugar.
Bake at 350 for 8-10 minutes.

Enjoy! Simple but tasty cookies.

Chicken Tetrazini

(also works as Turkey Tetrazini, but I don't like turkey)

what you need:
8oz. skinny noodles
2 c. chicken pieces
1 stick butter (1/2 c.)
1 c. sliced mushrooms
1 can Cream of Celery soup
1 c. sour cream
1/4 tsp. sage
salt and pepper to taste
parmesan cheese

Preheat oven to 350 degrees F.

Cook chicken pieces by boiling sliced, boneless, skinless, chicken breasts until the pieces are white and cooked through.
Tear chicken pieces into small pieces (length knuckle to knuckle on your pinky finger).
Cook and drain noodles.
Melt and stir butter into hot noodles until all butter is melted.
Add chicken, mushrooms, celery soup, sour cream, sage, and salt and pepper. Stir until everything is well mixed.
Pour contents into a casserole pan and sprinkle top with parmesan.
Bake at 350 for approximately 40 minutes.

I usually make a double batch and freeze the extra - it reheats well.

This will be a blog of recipies (as hopefully I will be cooking more often), food experiences, and general food related stuff.

Since I'm not up for really posting anything interesting right now, check out Cooking for Engineers. It's cool. This will probably not be as cool.
